What to do with feta? Cyril Lignac has a recipe for you: a delicious pie made with feta, this curd cheese in brine from Greece, and sheep’s milk.
Here is the list of ingredients:
8 sheets of filo pastry
150 grams of melted butter
2 tbsp. Tapioca
1 punnet of Greek feta
120 washed cherry tomatoes
A few leaves of fresh oregano
olive oil
Fleur de sel and pepper
For the Onion Compote:
4 sweet onions
100 grams of butter
Recipe steps : Thinly slice the onion. In a saute pan, put butter, let it brown, add chopped onion and season with fine salt. Leave to stew until soft and slightly caramelized. Check the seasoning.
Place a 20/22cm diameter pie pan on your work surface, melt the butter and butter the phyllo sheets, then place them in the pie pan, gathered edges up. At the bottom, pour a light layer of tapioca over the whole pie, followed by the onion compote.
Top with feta cubes and cherry tomatoes cut in 2, season with olive oil and add a few oregano leaves. Bake at 180 degrees Celsius for 30 minutes.
Once cooked, season with fleur de sel and freshly ground pepper, then add fresh oregano leaves.
