ingredients
- 4 drumsticks, boned and halved
- 1 jar of Shish Taouk Al’Fez Marinade Mix
- Salt and pepper to taste
SALAD OF CABBAGE AND CUCUMBERS
- 1 cucumber, sliced
- 500 ml (2 cups) green cabbage, shredded
- 1 clove of garlic, minced
- 30 ml (2 tablespoons) mayonnaise
- 120 ml (8 tablespoons) lemon juice
- 60 ml (4 tablespoons) olive oil
- 60 ml (4 tablespoons) Tahan Al’Fez
- 90 ml (6 tablespoons) mint leaves, chopped
- Salt and pepper to taste
DIP
- 60 ml (4 tablespoons) maple syrup
- 1 clove of garlic, minced
- 5 ml (1 teaspoon) Al’Fez harissa
- Salt and pepper to taste
Preparation
Stage 1
Place the chicken on a plate, add the shish tauk marinade and leave to marinate for 30 minutes to 24 hours.
2nd step
Heat the barbecue to maximum.
Step 3
On a barbecue grill, sear the thighs for 3 minutes on each side, then continue with indirect cooking, lid closed, for 5 minutes.
Step 4
Meanwhile, for the salad, mix the cucumber, green cabbage, garlic, mayonnaise, lemon juice, olive oil, tahini and mint leaves in a bowl. Check the seasoning.
Step 5
For the dip, in a small bowl, combine the maple syrup, garlic, and harissa. Check the seasoning.
Step 6
Spread the prepared salad on each plate, place the piece of chicken on top and pour the dip on top.
