Discover this barbecue chicken tauk alfez recipe from Chef Jonathan Garnier

Serves: 4 – Prep: 15 minutes – Marinate: 30 minutes to 24 hours – Cooking: 11 minutes


  • 4 drumsticks, boned and halved
  • 1 jar of Shish Taouk Al’Fez Marinade Mix
  • Salt and pepper to taste


  • 1 cucumber, sliced
  • 500 ml (2 cups) green cabbage, shredded
  • 1 clove of garlic, minced
  • 30 ml (2 tablespoons) mayonnaise
  • 120 ml (8 tablespoons) lemon juice
  • 60 ml (4 tablespoons) olive oil
  • 60 ml (4 tablespoons) Tahan Al’Fez
  • 90 ml (6 tablespoons) mint leaves, chopped
  • Salt and pepper to taste


  • 60 ml (4 tablespoons) maple syrup
  • 1 clove of garlic, minced
  • 5 ml (1 teaspoon) Al’Fez harissa
  • Salt and pepper to taste


Stage 1

Place the chicken on a plate, add the shish tauk marinade and leave to marinate for 30 minutes to 24 hours.

2nd step

Heat the barbecue to maximum.

Step 3

On a barbecue grill, sear the thighs for 3 minutes on each side, then continue with indirect cooking, lid closed, for 5 minutes.

Step 4

Meanwhile, for the salad, mix the cucumber, green cabbage, garlic, mayonnaise, lemon juice, olive oil, tahini and mint leaves in a bowl. Check the seasoning.

Step 5

For the dip, in a small bowl, combine the maple syrup, garlic, and harissa. Check the seasoning.

Step 6

Spread the prepared salad on each plate, place the piece of chicken on top and pour the dip on top.
