Margot Karoff, a journalist at franceinfo, literally tells us about “pollo loco”. “crazy chicken”a dish made from the bottom of cupboards from a holiday home in Belle-Île-en-Mer.
“It was summershe recalls. My father didn’t know what to cook for us. To empty the cupboards, he bought chicken legs and decided to put almost everything in them”. The principle is to marinate the chicken in a coconut milk based sauce. “There’s also sliced onions, diced tomatoes, soy sauce, mustard, ginger, herbs… We add whatever we want to it. It’s collaborative and anti-waste.”
What Margot likes most about this dish is the sauce, which goes well with white rice. “When you taste the dish at the table, the game is to guess what you put in the sauce. You have to find the different mystery ingredients.”
