  • 3 sheets of gelatin
  • Liquid cream 60 cl
  • 50 grams of sugar
  • Optional: fig jam or a few fresh figs

For fig leaves, choose them very green, tender if possible. Be careful when cutting them, the latex in the juice can be allergenic, especially if you expose yourself to the sun.

Recipe Steps:

  1. The day before: Run the fig leaves under water, then cover them directly in the saucepan with the liquid cream. To do this, heat the cream and fig leaves until boiling before cooling. Place the pan in a cool place, leave to rest overnight.
  2. Next, place the gelatin sheet in a hollow container containing cold water.
  3. Remove the fig leaves from the cream, then squeeze them by hand over the saucepan. Add sugar and reheat everything. Mix everything well.
  4. Add the drained gelatin sheets to the cream, adding them one at a time to the hot cream. Stir the cream until the gelatin sheets are all dissolved.
  5. All you have to do is pour the cream into 4 verins, then leave to cool. Once cooled, refrigerate the panna cotta for at least 6 hours.
