Scallions are cousins of spring onions, with one difference that can be seen with the naked eye: their bulb is much thinner, so thin that it blends into the stem. Very popular in Provence, they are used in all Mediterranean cooking and also in Asian dishes. In the following recipe, they are mixed with flour to get beautiful patties, which can be dipped in zaatar, sesame and chili sauce.

Ingredients for 4 people
-180 g flour (+ not bad for production)
– 160 ml of boiling water
-12 ml black sesame oil (black sesame oil available at Asian grocery stores)
-23 ml toasted sesame oil
-2 or 3 spring onions (about 100 grams)
-Salt and pepper
– Olive oil for cooking (about 8 to 10 spoons)

1. Learn how to keep it simple
Mix flour, hot water, salt and pepper. Allow to cool slightly then knead vigorously to obtain a pliable, smooth and slightly sticky dough.
Let it rest in the kitchen for 30 minutes.
2. But not simple
Meanwhile, prepare the sauce that makes it and combines the many ingredients that will make it unique.
Wash and finely chop the spring onion.
Mix sesame oil in a small bowl.
3. And take some pain
Divide the dough into 4.
Flour the work surface and form a piece of dough into a thin disc about 20 cm in diameter.
Brush on the sesame oil mixture in a thin layer.
Roll the galette into a sausage and then roll the sausage back on itself to form a spiral.
Flour the work surface between each step to prevent the dough from sticking.
Flatten the spiral into a pancake shape, brush lightly with sesame oil then sprinkle with spring onion, salt, pepper and roll tightly then roll again into a spiral.
Flour, gently spread into a round pancake and set aside on a plate.
Repeat this little merry-go-round with the other 3 pieces of dough.
4. Best ability
Heat a frying pan, add a little olive oil, cook a pancake for 3 to 4 minutes on each side, add a little oil for side B.
Salt and pepper, cook other patties and serve hot and crispy with unique sauce.
