Penne recipe with tomato juice

Yannick Hornez comes to the table this Friday with a simple world cuisine recipe.

Ingredients for 4 persons)

500g penne, 400g ripe tomatoes, 4 cloves garlic, 1 onion, 1/2 tsp ground espalette pepper, 1/2 bunch basil + few leaves, olive oil, Parmesan shavings, salt and pepper.


Peel the tomatoes (immerse them in boiling water for 1 minute, then peel them). Remove the seeds and cut the flesh into large cubes.

In a large Dutch oven, pour 1 liter of boiling water then add the chopped garlic cloves, minced onion and tomatoes. Bring to a boil, add the pasta and cook over medium heat for about 10 minutes. Stir regularly, check seasoning and doneness.

When the pasta is done, add the peppers, chopped basil and 1 drizzle of olive oil and toss again.


Serve the pasta Chath », adjust seasoning, garnish generously with parmesan shavings and garnish with whole basil leaves.
