The chicken offered by Kirsch Butcher comes mostly from local farms. This “Lët’z Poulet”, born from an initiative of La Provençale and four families of local breeders, lives and grows in the Grand Duchy. The animals benefit from space and natural light, as well as a healthy diet consisting mostly of cereals produced in Luxembourg and without GMOs. A guarantee for high-quality and rich-tasting chicken!
Ingredients for 4 people:
– 1 chicken
– 1 kg of apples
– 2dl fresh cream
-1 head of onion
– 25cl raw cider
In a cast-iron casserole, with a mixture of butter and oil, fry the chopped onion, as well as the chicken, which you will salt and sprinkle with black pepper.
Meanwhile, peel the apples. Cut them into large slices and set aside.
Soak the onion and chicken in the pan with 25cl of cider.
Sprinkle with a pinch of cinnamon before covering the casserole and cook for 1 hour over moderate heat. 20 minutes before the end of cooking, add the apples.
Arrange the chicken and apples in a deep dish and warm them. Sprinkle the bottom of a pan with a teaspoon of powdered sugar, let it caramelize for three minutes, then moisten with half a cup of cider and add the fresh cream.
Cook for 2 to 3 minutes to evaporate the alcohol, then pour the sauce over the chicken. All that remains is to serve!
