Recipe The best homemade cordon bleu
- 2 chicken cutlets
- 2 slices of ham
- 4 slices Emmental cheese (or melted cheese toastinetti)
- plain flour
- 1 egg
- 1 knob of butter
- 1 drizzle of olive oil
Open the chicken cutlets in the wallet (ie, open them without completely separating them). Place them on cling film and roll them under a rolling pin to soften them. Salt and pepper.
Place the ham on top of the chops as well as the cheese. Please note: the ham and cheese must not stick out of the escalope! You need to leave a margin of about 1cm so that it doesn’t all leak out when cooking.
Close the cutlet tightly and, if necessary, secure it with a toothpick.
Roll the cordons bleus in the flour, then shake off the excess. Dip them in beaten egg and finally in breadcrumbs. You can double the breadcrumbs by substituting an egg and breadcrumbs for a crispy breadcrumb.
Melt the butter with the olive oil in a pan. Cook the cordon blot on low heat so that the breadcrumbs do not burn. Let cook for 10 minutes, turning occasionally.
