Tortilla recipes, like in Spain

Gregory Cohen offers a tortilla recipe, including onions, even if this ingredient is controversial in Spain. He considered that the historical recipe had nothing but that it was better with this one. “Cooking really is popular culture. That means we get to take it, make it our own, and do what we want with it as long as it’s good and we like it. After all, why not do good?”

  • 4 potatoes (Annabelle, Charlotte, Rosevale, Rhett…)
  • 1 onion (yellow, white or red)
  • 4 eggs
  • 10 cherry tomatoes
  • A teaspoon of honey
  • Two drops of olive oil
  • A sprig of rosemary
  • A clove of garlic
  • A pinch of salt and a pinch of pepper

Peel the onion, cut into strips, fry in a pan with a drizzle of olive oil until the onion sweats. Then add honey and let it stew. We’re going to have caramelized onions.

Peel the potatoes, or not. We do as we please. Cut them into small cubes and brown them in a pan with a little fat, ideally olive oil and a little butter, rosemary and garlic powder.

In a bowl, add beaten egg, salt, pepper. Beat hard enough. Then add onions, potatoes and mix.

In a small pan, heat a drizzle of olive oil, then pour in the mixture. Add whole cherry tomatoes. to cover. Cook until the edges turn brown.

Flip your omelet, and you have to go really fast. Place a plate over it and invert. Cook it on the other side and then, you can decide if you want it cold or a little hard. This is ready!
